Moto / iNG Chemistry & Food Demonstration

On Thursday, December 6, Lane was visited by Top Chef Season 9 Contestant, Richie Farina (Moto) and Biology-teacher-turned-chef Mike Kosiak (iNG).  The chefs performed a food demonstration in the new STEM Wing involving the making of ice cream using liquid nitrogen and taste-bud-trickery using powdered miracle berries.  The chefs explained how science is involved in the culinary field and how food science is being used in the medical field.  With the miracle berry, for example, chefs can create dishes that allow diabetic patients to enjoy sweets without any added sugars.




Additionally, the chefs explained how liquid nitrogen can be used to quickly alter temperature and pressure in anything from food to balloons.




Students in attendance sampled caramel ice cream made using liquid nitrogen and also experienced the effect of miracle berries.  Sour lemons tasted like sweet lemonade and limes tasted like oranges!




Chemistry teacher, Ashley Rose, set up the event in order to expose students to some of the more creative applications of chemistry in the real world.
